Q:I am looking for desserts I can make and freeze for a few months. I enjoy making cookies but I am looking for other ideas as well.
A: Keeping a few small desserts on hand in your freezer is a great way to plan ahead for entertaining guests or satisfying a sweet tooth. When looking for good desserts to freeze, remember some of these tips:
Solid finished product
Desserts with a firm or dense textures are great for freezing because they can keep their shape when individually frozen; brownies, bars and cookies are good examples. Also, porous items may absorb the flavors of other foods in the freezer if not properly maintained.
Low moisture content
To avoid unwanted freezer burn, find recipes low in moisture content. Custards, gelatins and raw fruits will lose their shape, moisture and flavor when frozen. Desserts kept in the freezer for extended periods of time can dry out easily. Make sure the products you freeze can withstand slight changes in texture. Items may crumble, harden or leach additional moisture when thawed. Also, some flavors may be lost after freezing. You may add additional spices and flavorings to combat this potential problem.
Individually wrapped
Desserts that easily form individual pieces that can be wrapped separately are good for freezing. This will reduce the risk of freezer burn from occurring. It is best to keep individual serving in large freezer-safe plastic bags. This way, the items stay fresh longer. Wrapping items will also allow you to have pre-portioned items ready to eat.
Easily Reconstituted
Adding moisture, heat or sauces to dessert items can rejuvenates them back to their original state. . Also, some items can take on a different purpose after being frozen. Simple items like pudding can be turned into pudding pops. Add some leftover chocolate and nuts, and you are sure to have a gourmet treats everyone will love.
